Did you think you'd seen all of Cora's awfulness and disdain of love and family that there was to see? Wrong. Actually, you're not wrong. Once Upon a Time has delved into Cora's selfishness and terrible parenting skills time and time again. There's not much fresh information to be mined from that mountain. However, they returned to it anyway in order to give more color to Zelena and Regina.
From the perspective of bringing Zelena and Regina to a new place, I get it. They needed to introduce a different element between the sisters in order to avoid a repeat of the same conversation they've had multiple times. In theory, Cora could have been the key necessary to get to Zelena's core. Unfortunately, her and Regina hatched the brilliant plan of being duplicitous with their approach. Seriously, kids, how did you not realize this technique would go awry?
